Slow Cooker Pork Roast With Apples and Pears Recipe

The winter months are perfect for making anything andeverything in your crock pot – and there’s no reason you can’t expand beyondbeef stew or good old New England pot roast. Here’s a recipe I created based onone I read in Cook’s Illustrated forBraised Pork Chops. Because the flavor profiles of pork and fruit go so welltogether, it was a natural to combine them in a slow cooker. An added bonus?This is the perfect recipe for cheap, tough cuts of pork such as the blade orarm roasts.
Slow Cooker PorkRoast With Apples and Pears
(1) 1 pound bone-in pork roast 3 T. kosher saltWater1 T. olive oil1 medium-sized white onion, thinly sliced2 cloves garlic, chopped1 bay leaf1 medium-sized apple (variety of your choice), peeled, coredand sliced into twelfths1 medium-sized pear (variety of your choice), cored andsliced into twelfths ½ t. whole allspice½ t. minced fresh ginger½ cup pomegranate juice2 T. balsamic vinegarFreshly ground black pepper
Dissolve kosher salt in about one quart of water. Add thepork roast and allow to brine for at least an hour.
Meanwhile, heat your crock pot to high. Add oil, onion,garlic and bay leaf. Cook until slightly softened. Add apple and pear slices,bay leaf, allspice and ginger.
Remove pork roast from brine and pat dry. Sprinkle withblack pepper. Place on top of veggies and fruits. Pour pomegranate juice andbalsamic vinegar over all. Cook on high for one hour, turning roast overhalfway through. Reduce heat to low and continue to cook, covered, for 4 – 6 hours.
Serves 4

I ran across these uses for plain white sugar in the latestissue of Cook’s Illustrated magazine(which I really love because it delves deep into the how and why of cookingfood – almost like a science lesson in the kitchen!). In addition to the facial scrub recipe I shared with you (which actually uses brown sugar), these are great ways to use a common householditem to solve a common household problem!
As an extra bonus, do you know how to keep or make brownsugar soft again? You can either store it in a terra cotta container, add an appleslice to the bag, simply microwave it for about 30 seconds, or bake on a sheetin the oven at 250 degrees for a few minutes. Any or all of these methods worknicely.
Keep Cookies Soft
Sugar absorbs moisture, so adding several cubes of sugar (ora little pill bottle filled with sugar to your cookie jar will keep them moist,soft and chewy. This is perfect for cookies like snicker doodles or chewy chocolatechip.
Make Your Hands SmellGood
After you’ve chopped pungent ingredients such as onions orgarlic, scrub your moistened hands with a bit of sugar. You may have to leavethe sugar on your hands for a minute or two in order to totally get rid of thesmell.
Relieve Burns
We’ve all burned our tongues on a hot food or liquid before;next time try placing your tongue on a spoonful of sugar. When the sugarcrystals hit your tongue, they will begin to dissolve right away and pull outthe heat.

If you’ve been reading my blog for any length of time, youknow I try my hardest to get my husband on the healthy, veggie eatingbandwagon. He’s pretty good about trying things although sometimes strangecolors upset him (he thought purple potatoes, for instance, were just “wrong”).However, knowing that he likes tuna salad sandwiches, I decided to try thisrecipe for dinner one night. Success! Although he didn’t say he’d ask for thisdish again, he cleaned his full plate, which is good enough in my book.
For the ultimate in fresh color to tempt your vision as wellas you palate, use different varieties of the base ingredients. I’m not addingspecific measurements because with this salad, you only need to pile theingredients on the plate so use whatever you have or whatever ratio is mostdelicious to you and your family. The recipe below makes one full plate of heartysalad.
This salad is a feast for the senses and sure to tempt even the pickiest veggie eater.

Tuna Salad Nicoise
Mixed baby greens and/or herbs1 packet of tuna in olive oil (or 1/4 pound freshly grilled tuna steak)3 baby potatoes, boiled (use purple, red or yellow or acombo)1 hardboiled egg, peeled and cut into quarters1/3 cup kalamata olives, pitted (use a cherry pitter)1 green onion, white and green parts sliced on the diagonal Green beans or asparagus spears, cooked and tossed withItalian dressing4 Baby heirloom tomatoes, halved and tossed with strips of freshbasilYour favorite oil and vinegar salad dressing
To assemble salad, place greens in center of plate. Top withtuna. Surround salad with remaining ingredients. Grind a bit of black pepper over thetop. Drizzle with salad dressing.

Here’s an update on my weight loss journey – during thisweek of Valentine’s Day, I’ve completely blown my diet. Yep, I made beef filetand lobster tails for my sweetie on Valentine’s Day, we had a potluck at mywomen’s Bible study group, and then I made this recipe for a yummy dessert toshare with my husband.
The worst part of all that? This yummy dessert. It’sdeceptively simple to make, with only 4 or 5 ingredients, but I’m addicted to thebars (I got the recipe from the Spark People website so I thought it would besomewhat healthful and not bad on calories). I mean literally, I just can’tmuster enough self-control to stay away from them. So…I’ve gained back 1 pound,which isn’t too bad, overall. My goal now is to get rid of the remainingchocolate bars and get back on track. And I will never, ever make these barsagain while I’m trying to watch my weight!
Try making these bars and tell me if they are addictive as Ithink they are…
Chocolate CrackersBars
20 Saltine crackers1/3 cup butter1/3 cup sugar1 cup semi-sweet chocolate chipsPowdered sugar or finely chopped nuts (about ¼ cup)
Preheat oven to 350 degrees.
Spray a 13 x 9 inch rimmed baking pan with nonstick cookingspray. Lay crackers in the bottom of the pan. Melt butter in the microwave; addsugar and still until well combined. Drizzle evenly over the crackers.
Bake for 10 minutes, until sugar caramelizes. Remove fromoven and sprinkle with chocolate chips. Pop the pan back into the oven forabout a minute, just until the chocolate starts to melt. Remove from oven anduse a spatula to spread the chocolate evenly across the top of the crackers.Sift powdered sugar over the top and/or top with nuts.
Makes 20 pieces with about 100 calories each (that is if you can eat only one piece... I dare you to try!)

As you may know, I started a diet in January. It was my NewYear’s resolution to make 2012 the year I would lose weight. After getting offto a slow start (I’ve only lost 5 pounds total so far!) I decided to graduallyadd back in some foods with a bit more fat and calories. I think one of mymistakes was to almost completely get rid of all the fat in my diet and stickto a low (1,200) calorie diet. My body went into shock and storing up fatbecause it didn’t know when the next good meal was coming.

Consequently, I’ve gone with my husband to the Native NewYork in Show Low the past couple weekends. It’s in a convenient location for usand has a nice, well-rounded menu (unless you’re dieting…). We went into thebar and played the trivia game while we enjoyed a beer and a glass of wine andthen ate. The service was great (most likely because we were sitting right infront of the bartender) and the ambience typical of a sports bar.
Review of Native New Yorker, Show Low February 4 and February 11, 2012
The first time we went, my husband ordered the fish slidersand I opted for NNY Bruschetta. My husband enjoyed the sliders, which came outhot and moist along with a large helping of French fries. These are nicely seasoned home fries, with a good mix of thick, chewy pieces (my husband's fave) and thinner, crunchier ones (my faves). My bruschetta wasquite good, topped with spinach and artichoke chunks and a sprinkle of Parmesancheese. The garnish was a mild salsa which was kind of an odd choice, but wentpretty well with the bread. My husband and I both finished our plates (and I even sneaked a fry or two off his plate).
The second time we visited Native New Yorker, my husbandordered the boneless Native wings in both medium and hot versions (this is thedish NNY is best known for), which were served with the ubiquitous celerystrips garnish and a side of ranch dressing. He liked the hotter wings best andeasily finished his plate. I tried the spinach and artichoke dip this time,which is served with tri-color tortilla chips. I’ve had this appetizer at NNYbefore and I remembered it to be better than it was this time. I don’t know ifthis was just an “off” day or if the recipe has changed, but the dip was almosttasteless. As for the spinach and artichokes? The spinach was nowhere to be seenand the artichokes were pathetic, which to me means they were either chopped really, really small or perhaps itwas just a dehydrated seasoning packet that was added to the cheesy base.Because I was hungry I finished it all, but I had to add salt and pepper to the dip tomake it palatable. Even the chips were barely salted and tasted like a lot of nothing.
The lesson here is that if you’re going to a restaurant likeNative New Yorker, be prepared to ditch your diet and go with one of the housespecialties, such as a sandwich or pizza or wings. Even the salads are full ofcalories so there’s really no low-fat or low-cal choice on the menu. If you’relooking for a family-friendly, comfortable place to watch the game and have abeer, Native New Yorker fits the bill – but don’t expect fine dining or greatfood.
