My weekend was JAM PACKED, I held a 3-day garage sale and raised $1,050 dollars for my son's Washington DC and New York City field trip, and today I am leaving on a plane to Missouri but not before I announce the winner of the APPLE PIE challenge. It's time for that CRAZY COOKING CHALLENGE ultimate recipe. The Apple Pies were kind'of all over the place from apple bars, to apple pie cookies and then the traditional apple pies, which is what we were looking for. But, in all fairness, I wanted to promote the apple recipe that received the MOST hits.

I am LOVING the NEW CRAZY COOKING CHALLENGE and it's simple rules, the easy link up and all all the information being delivered in one post (on the 7th of every month), no more pouring through 100+ emails every week. Yes, I really think I am gonna LOVE LOVE the new CRAZY COOKING CHALLENGE, I hope we can get some more followers and bloggers who want to join in with us, because it truly is alot of fun. I actually made this treat last year for the first time and never got the chance to share it with you. But, it's here now and just in time for you to make for Halloween or pin this recipe for Thanksgiving. It's perfect for BOTH! My son is 13 years old now, my twins are away at college and I am afraid this mommy may just be seeing the last trick-or-treater in my house this year. He is still on the fence if he will trick-or-treat or not, so the jury is still out.  Here is one of my favorite pictures of my twins, their BFF's and my adopted kids (the triplets) and the LITTLE BOY from a few years back, my girls were always troopers and dressed up every year from when they were born until Senior Year of High School, my son not so much. 
Caramel Nilla Wafers
recipe found in Kraft Foods Magazine (Holiday 2011)

18 Nilla Wafers
8 (or more) Kraft caramels (or other melted caramel that will harden)
melting chocolate (white or milk)
almonds, pecans or Hershey Kisses

Place nilla wafers, bottom-side up on a baking sheet. Microwave caramels until melted (about 1 minute, stirring every 30 seconds). Let caramel stand about 1 minute, then spoon about 1 tsp of melted caramel onto each wafer; top with pecan, almond or Kisses. Melt about 1/4 cup of white chocolate (or milk) and drizzle over wafers.

  It's our very last LINKY PARTY {THIS WEEK'S CRAVINGS}, I started this oh so long ago when I first started my blog and I think it has ran it's course. I still LOVE LOVE blogging, but I HATE HATE having a schedule and having to post on a certain day at a certain time. I am still growing my blog and looking for new avenues all the time, I just think linky parties are not it right now. Blogging is my outlet, my free time thing and I do it for my love of cooking. I am not making a million dollars  and I am not stopping anytime soon, but I just want it to be FUN FUN FUN and no presure, so I am sorry to say this will be my last THIS WEEK'S CRAVINGS linky party (at least for now, never say never). Today I am bringing you a recipe I made about 2 years ago (and never posted, yeah I have alot of those). This trail mix was the BOMB! It was so delicious and so yummy, I kinda wish I had some right now. It's a good healthy trial mix too, which would be perfect for my diet. Ya, who starts a diet in November (ME, that's who!). I have a small goal, a next goal and a BIG goal. My first goal before Thanksgiving is 5 lbs. I CAN DO THIS!  
First step is to clean out the punkpin seeds. I do this and then I take the pumkins and make homemade puree'. Yep, I love love having homemade puree in my freezer all year long.

Pepitas Trail Mixadapted and made by me, taken from Pioneer Woman

1 whole pumpkin, seeds
Olive Oil
Kosher Salt
Pumpkin Spice Seasoning

Mini Chocolate Chips
Almonds, no salt
Vanilla Granola Clusters (any kind of granola will work)

Keep all the seeds from one or more pumkins in a bowl. Throw them into a colander and rinse them under cold water, pulling away the chunks of pulp as you go.

Spread the rinsed seeds out on a baking sheet. Allow the seeds to dry several hours or overnight. And beware: they’re quite sticky/slimy, so don’t place them on paper towels! Just leave ‘em on the baking sheet and they’ll be fine.

When they’re nice and dry, go ahead and preheat the oven to 250 degrees. Begin by drizzling the seeds with a couple teaspoons of olive oil. Use your fingers to toss the seeds around to coat.
Then salt and season the seeds to taste.

Pop ‘em in the oven for an hour or so, until the seeds are light golden brown. Let them cool for a few minutes…then let the snacking begin!

But if you wish to make the trail mix make sure the seeds are completely cooled and add chocolate chips, almonds and granola and toss.

Pepitas Trail Mix can be stored in an airtight container for a few days.

Hot Vanilla Caramel {with Sweet'N Low}

We live in California, where we can go swimming on Christmas Day, so it's a rare day when we can serve a hot drink and enjoy it. I love a hot drink, but ONLY on a cold cold day. So, today was one of those days, although the sun did come out, it was still cold enough to create a little chill outside and we were able to enjoy this HOT new drink we created.


Hot Vanilla Caramel

(makes one serving)
1 cup milk
1 pkg Sweet'N Low
1 cup whipping cream
1/4 tsp cinnamon
1 tbsp caramel syrup

In a microwave save glass cup heat up 1 cup of milk and the 1 pkg of Sweet'N Low for approximately one minute. In the meantime mix in a separate bowl the whipping cream, cinnamon and caramel syrup until combined. Add the whip cream mixture to the milk mixture and shake in a shaker (or mix up in a blender). Pour into a mug and return to microwave for 1 more minute. Add a dollop of whip cream and a sprinkle of caramel syrup before serving.

Brownie Recipe number ..... 5... 6... 10... 14... I've lost count, but I am not complaining at ALL. I know one day we will find that ONE, that ONLY brownie recipe we will make for all eternity (haha, until someone else shares another NEW recipe, that I just MUST try). But for now my son and I are having so much fun trying (and eating) all these delicious brownie recipes.

This one we LOVE because it's from a box (I know, I know), but it's so easy and it tastes so GOOD! I am telling you, making brownies from scratch is not easy, to thick, to cakey, to mushy, to dry and never moist enough. From a box is OH so perfect. This is a box recipe, twisted into something better.

Rich Chocolate Brownies

1 pkg brownie mixdouble the number of eggs called for on box Milk or Heavy Cream in place of waterOil (whatever it says on the box)1-1/2 tsp vanilla2 cups semi sweet chocolate chipsPowdered Sugar (for sprinkling) Preheat oven to 325. Mix all ingredients together. Mixture will be thick.  Grease a 9 x 13 in pan (or use parchment paper and cooking spray). Bake for about 35 - 40 minutes.   Let brownies cool in pan, sprinkle with some powdered sugar over the top just before cutting them. If you used parchment paper (which I love), just pull the whole batch out of the pan, no scraping the bottom of the pan) and try cutting with a wet sharp knife. Perfect brownies every time.

Grill Recipe for Steak Ingredients
  • 4 teaspoons salt, or to taste
  • 2 teaspoons paprika
  • 1 1/2 teaspoons ground black pepper
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon garlic powder, or to taste
  • 3/4 teaspoon cayenne pepper, or to taste
  • 3/4 teaspoon ground coriander, or to taste
  • 3/4 teaspoon ground turmeric, or to taste
  • 4 (16 ounce) t-bone steaks, at room temperature
Grill Recipes for Steak Instructions

Preheat an outdoor grill for high heat, and lightly oil the grate. Stir the salt, paprika, black pepper, onion powder, garlic powder, cayenne pepper, coriander, and turmeric together in a small bowl; set aside.
Rub the steaks on all sides with the seasoning mixture. Cook on the preheated grill to your desired degree of doneness, 3 to 3 1/2 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Enjoy the steak !

It's Summer Time - Let's Barbecue!!

Yep, it's that time of year when most people think of cookouts and barbecue. I saw a statistic recently that 71% of all households have some type of grill to prepare barbecue, and half of those use their grills all year long. We don't do it as much, but then we have been working hard at cutting down on our meat consumption anyway. Still, 'tis the season, so here I re-post my most favorite sauce of all - Mutha Sauce. It beats that stuff in the glass (or plastic) jars everyday, and twice on Sunday!

"Mutha" Sauce

This sauce requires a lot of ingredients and can be served chunky style or you can puree it and make it smooth should you desire, but it just might be the only BBQ sauce that you will use this summer! It will make about six or seven cups. It is rich! You can reduce or eliminate the oil if you are looking to reduce your fat intake (I usually cut the oil back to a tablespoon).

1/4 cup vegetable oil
1 cup minced onion
1/2 cup minced green pepper
1 jalapeno pepper, seeded and minced
pinch kosher salt
2 tbsp minced garlic
1 can (28 oz.) tomato sauce
2 cups ketchup
1 cup water
3/4 cup worcestershire sauce
1/2 cup cider vinegar
1/4 cup fresh lemon juice
1/4 cup molasses
1/4 cup cayenne pepper or Tabasco sauce
1/4 cup spicy brown mustard
3/4 cup dark brown sugar
1 tbsp chili powder
2 tsp coarsely ground black pepper
1/2 tsp ground allspice
1 tbsp Liquid Smoke

In a large saucepan, pour in the oil. Set over medium high heat. Toss in the onions, green peppers and jalapeno and give them a stir. Season with a pinch of salt and cook until soft, but do not burn. Add the garlic and cook one minute.

Add the rest of the ingredients EXCEPT the Liquid Smoke. Bring to a boil, then lower heat so the sauce simmers. Simmer for 10 minutes. Swirl in the Liquid Smoke and let the sauce cool. It will be chunky at this point. If you desire a smooth sauce, run the sauce in batches through a blender. Pour into glass Mason jars or other glass container and cover tightly. Store in the refrigerator until ready to use. Makes 6-7 cups of excellent sauce. It also makes great gifts and will keep for weeks!

Steak Recipe Ingredients:
  • 4 14 ounce rib-eye steak
  • 2 portabello mushrooms, stems and gills removed
  • 12 sun-dried tomatoes
  • 4 fresh rosemary sprigs
  • salt and pepper to taste
  • Steak Sauce:
  • 1 cup beef stock
  • 1/2 cup balsamic vinegar
  • 1/4 cup fresh ginger, finely chopped
  • 1/4 cup shallots, finely chopped
  • 1/4 cup carrots, finely chopped
  • 1/4 cup celery, finely chopped
  • salt and pepper to taste

Steak Recipe Instructions:
Combine ginger, shallots, carrots and celery in a saucepan over a medium high heat. Caramelize (that means sauté until browned slightly). Slowly pour in balsamic vinegar, stirring. Reduce by 1/2 and add beef broth. Bring to a boil. Season to taste.

Meanwhile, preheat your grill. Grill steak. Season mushrooms with salt and pepper and place on grill. Grill steak to desired doneness and mushrooms until they are tender. Remove everything from the grill. Cut mushrooms into small triangles. Skewer mushrooms pieces with sun-dried tomatoes on to rosemary sprigs.

Place grilled steak on plate. Top with rosemary skewers and sauce. Serve.
