Dessert Ex-Straw-Vaganza

If you're rescue mission staff, you are accustomed to having responsibilities outside the normal scope of your job description.  That is why I, as human resources director, had oversight of the Strawberry Festival's Dessert Ex-Straw-Vaganza dessert competition (but I also had a lot of assistance from co-workers).  Because it's such a fun event, and I get to sample the entries afterward, I don't mind at all!  This year we had seven finalists who made some fantastic strawberry desserts.  The entries were judged by a panel of six judges, comprised of local "celebrities' and baking experts. They carefully scrutinized each dessert and awarded points based on presentation, creative use of ingredients, and strawberry flavor.  As they say, it's a tough job, but somebody has to do it!  Our local radio program, "Listen to the Mrs." with Art Lewis and Sue Smith, did a remote broadcast of the contest, as well as offered advice through the planning process.

The winning recipe, Two-Tiered Strawberry Pie, was entered by one of our dear mission volunteers.  Nancy was quite surprised that she won, claiming she had never made a strawberry pie in her life.  The recipe she used was an "old, old recipe that belonged to [her] mother," and Nancy was kind enough to give me permission to share it freely. . .so I am!  I know I'll be making this pie in the near future. . .maybe tomorrow!  :)  


Two-Tiered Strawberry Pie (a make ahead dessert to chill until time to serve)

Baked 9" pie shell
1/2 cup sifted confectioners sugar
1/2 tsp. vanilla
1/2 t. almond extract
3 oz. pkg. cream cheese
1/2 cup heavy cream, whipped
1/3 cup sugar
2 T. cornstarch
1/3 cup water
1/3 cup grenadine syrup
1 T. lemon juice
2 cups fresh whole strawberries

Add confectioners sugar, vanilla and almond extract to cream cheese and beat until smooth and creamy. Fold in whipped cream. Spread evenly over bottom of baked pie shell. Chill thoroughly several hours. Combine 1/3 cup sugar and cornstarch in saucepan. Add water slowly, stirring to make a smooth mixture. Add grenadine syrup and lemon juice. Cook, stirring constantly, until thick and clear. Cool. Add to strawberries and stir to coat with glaze. Spread over top of chilled cheese layer. Chill before serving. Additional whipped cream may be used for garnish.

I'd have to say that Skagway was my favorite Alaskan port.  The quaint little town was nestled at the base of majestic mountain scenery and was rich in history of the by-gone gold rush days.  Joel and I were initially reluctant to do the highly recommended White Pass Railway, because of a bad experience with another snow train excursion years ago, but we are so glad we did!  We chose the excursion option that involved a bus trip up to Fraser, British Columbia, where we boarded a 3/4 gauge train and rode down the mountains to Skagway. The landscape was breathtaking!  Joel spent almost the entire trip on the train's "front porch" so he could capture all the beauty.

This week's new recipe comes from one of my Paula Deen cookbooks.  By the way, have you heard that she's lost thirty pounds?  Good for her!  I just hope that doesn't affect her recipes.  Is there such a thing as southern cooking "lite"?  


Georgia Chicken is another dish that doesn't take a lot of ingredients, prep, or cooking time.  We were able to sit down to a delicious meal within one hour of arriving home from work. . .and that's important to those of us who are accustomed to eating by six o'clock.  I know, we'd never make it in the big city. ;)


Ingredients:


4 T. (1/2 stick) butter
4 skinless boneless chicken breast halves
1 cup sliced fresh mushrooms
2 T. minced shallots
1/4 t. salt
1/4 t. pepper
4 ounces grated mozzarella cheese


Melt butter over medium heat.  Add mushrooms and shallots and sprinkle with salt and pepper.  Cook 10 minutes.  Add chicken and cook 10 minutes on each side, or until tender.  Transfer chicken to platter and sprinkle with grated cheese.  Top with mushroom mixture. Cover and let stand 5 minutes or until cheese melts.  


Note:  I removed the mushrooms and shallots from the pan before cooking the chicken, then returned them to the pan toward the end of the chicken cooking time.

And what are these rights? The Declaration mentions three: Life, Liberty, and the pursuit of Happiness. Obviously, these rights are not untethered from all other considerations. Life should not be lived in a way that means death for others. Our pursuit of happiness should not make others miserable. The Declaration is not calling for anarchy. It believes in government, good limited government rightly construed and properly constrained. But the rights enumerated here are still surprisingly radical. No matter how young, how old, how tiny, how in utero, or how ill, every person deserves a chance at life. Every one deserves a chance at self-governing. Everyone has the right to pursue his self-interest. There’s a reason the Founding Fathers did not wax eloquent about safety and security. It’s because they believed freedom and liberty to be better ideals, loftier goals, and more conducive to the common good.

Continue cooking the brisket, basting the meat and checking the internal temperature every half hour, and adding charcoal every hour. Remove the grilled brisket when the internal temp reaches 185° F.   • Two pounds of ground beef
  • One whole egg
  • Three slices white bread, crumbled
  • One small can tomato sauce
  • Two tablespoons dried onion flakes
  • One tablespoon Worcestershire sauce
  • One tablespoon prepared yellow mustard
  • One tablespoon Louisana hot sauce
  • One teaspoon salt
  • One teaspoon black pepper
  • One-half teaspoon garlic powder
  • One-half teaspoon ground cayenne pepper (or to taste)
INSTRUCTIONS
Combine all of the ingredients, blending well. Pull out about 3 feet of heavy duty aluminum foil and fold it in half to double it. Spray the center of the foil with "Pam for Grilling" non-stick spray.

Form the ground meatloaf mixture onto the foil, about two inches thick. You can make it round, square or octagonal. The shape doesn't really matter, but the thickness does.

Pull the edges of the foil up and bring them over the meatloaf. The meat doesn't have to be completely wrapped. In fact, your grilled meatloaf will have a better flavor when the top is left exposed as it cooks.

Place the meatloaf directly over medium coals and cover the grill. Cook for one hour and check the internal temperature. When it reaches 155 degrees Fahrenheit, remove it and let it rest for 10 minutes. Serve with your favorite side dishes.

You can adjust this grilled meatloaf recipe for sensitive tastebuds by deleting the hot sauce and cayenne pepper, using only 1/4 teaspoon of black pepper, and replacing the tomato sauce with ketchup. A nice baked recipe for steak !

GRILLED RECIPES FOR STEAK INGREDIENTS :
1. 6 cube steaks,
2. 1 cup of flour,
3. 1 teaspoon of garlic powder,
4. ½ cup of shortening or vegetable oil,
5. 4 tablespoons of flour for the gravy,
6. 6 cups of water,
7. 1 can of mushrooms,
8. 1 green pepper,
9. salt and pepper.

GRILLED RECIPES FOR STEAK INSTRUCTIONS
Preheat oven to 350 degrees. First heat a small amount of oil in a skillet until the oil is hot. To test the oil, wet your fingers with a small amount of tap water and flick into the oil quickly. If the water dances around the pan, the oil is hot enough. Mix together the 1 cup of flour, garlic powder, salt and pepper.

Roll each steak in the flour mixture being sure to coat completely. Now, brown both sides of the steaks in the hot oil. Then as the steaks are ready, place in a shallow baking dish, preferably one with a lid. If you do not have a lid you can use aluminum foil.

After the steaks are in the baking dish you are now ready to prepare the gravy. Make sure you have enough grease left in the pan to make the gravy if not add a little more shortening. Now, add the 4 tablespoons of flour, stir constantly until brown.

Add 2 cups of water continue stirring until the mixture thickens; add more water as needed until desired consistency. Stir in the mushrooms and then pour over steaks.
Bake covered for around 1 hour until the steaks are tender. The baked recipe for steak is ready to serve !! Enjoy the steak !

Turkey is NOT just for Thanksgiving. We stocked up over the holidays and have a few Turkey's in the freezer (and we paid only $7 bucks for them). I just LOVE making them fresh for us to enjoy a great meal on a Sunday afternoon and lots of scrumptious fresh Turkey sandwiches all week long. Plus we enjoy  many other Turkey left-overs like Cranberry-Turkey Quesadillas, Turkey, Cranberry and Brie Pizza and a few new ones I will be sharing with you this week (watch tomorrow for a very different kind of Enchilada). Yah, I know it's June, but Turkey is in the house! YUMMY!


This I do have to say has been my BEST Turkey I ever made (to date). I tried a brand new recipe and I don't know if I will ever try another. This Turkey was not just moist the day we made it, but days later the Turkey left-overs were still moist and delicious. Now that is a perfect Turkey recipe in my world.


Roast Turkey

Handle a raw turkey with the same amount of caution as when you handle raw chicken (I use gloves). Remove the neck and giblets (heart, gizzard, liver). Use the heart and gizzard for making stock (I use this recipe for Homemade Chicken or Turkey stock).

Preheat the oven to 400 degrees. Wash out the turkey with water. Pull out any remaining feather stubs in the turkey skin. Pat the turkey dry with paper towels. Lather the inside of the cavity with the juice of half a lemon. Take a small handful of salt and rub all over the inside of the turkey.

In this method of cooking a turkey, we don't make the stuffing in the turkey because doing so adds too much to the cooking time. For flavor, put inside the turkey a half a yellow onion, peeled and quartered, a bunch of parsley, a couple of carrots, and some tops and bottoms of celery. You may need to cap the body cavity with some aluminum foil so that the stuff doesn't easily fall out. Close up the turkey cavity with either string (not nylon string!) or metal skewers.  The neck cavity can be stuffed with parsley too.

Rub either melted butter or olive oil all over the outside of the turkey. Sprinkle salt and pepper generously all over the outside of the turkey.

Place turkey BREAST DOWN on the bottom of a rack over a sturdy roasting pan big enough to catch all the drippings. (yes, this is UPSIDE DOWN) This is the main difference. Cooking the turkey breast down means the skin over the breast will not get so brown. However, all of the juices from the cooking turkey will fall down into the breast while cooking. Add several sprigs of fresh (if possible)  rosemary and dried Herb de Provence spice to the outside of the turkey.

Put the turkey in the oven. Check the cooking directions on the turkey packaging. Gourmet turkeys often don't take as long to cook. For the 15 lb turkey, start the cooking at 400 F for the first 1/2 hour. Then reduce the heat to 350 F for the next 2 hours. Then reduce the heat further to 225 F for the next hour to hour and a half.
 
If you want the breast to be browned as well, you can turn the bird over so that the breast is on top, and put it in a 500°F oven or under the broiler for 4-5 minutes, just enough to brown the breast. Note that if you do this, you will have a higher risk of overcooking the turkey breast. (I do NOT do this)

Start taking temperature readings with a meat thermometer, inserted deep into the thickest part of the turkey breast and thigh, an hour before the turkey should be done. You want a resulting temperature of 175°F for the dark meat (thighs and legs) and 165°F for the white meat (breast). The temperature of the bird will continue to rise once you take it out of the oven, so take it out when the temperature reading for the thigh is 170°F, and for the breast 160°F.

Once you remove the turkey from the oven, let it rest for 15-20 minutes. Turn the turkey breast side up to carve it.

There are so many fun things to do with Turkey left-overs. I found this amazing enchilada recipe that I am sharing with you today, make sure you book mark this, pin it or print it out to make after Thanksgiving or if you are a CRAZY cook like me, you might just be making a whole Turkey in the month of June. Summer Time at it's best and fresh Turkey sandwiches all week long! I LOVE IT! I hope I have inspired a few of you to make a Turkey this summer to enjoy! Turkey is NOT just for Thanksgiving.

Now nothing beats a good ole' fashion white bread turkey sandwich, but after a few days of those you might be looking for something better. Last year I made these Cranberry-Turkey Quesadillas or my all time favorite was a Turkey, Cranberry & Brie Pizza.

Sometimes throughout the year I like to randomly make a big 20 lb plus turkey just so I can get some of my favorite turkey left-over meals like these. Here is a new one to try.
 

Turkey Cranchiladas
adapted from recipe found at Pink Parsley, originally from Better Homes and Gardens

2 to 2 1/2 cups shredded turkey
2 cups fresh cranberry-pomegranate sauce (or 1 (16 oz) can)
1/2 cup sour cream
1-1/2 cups shredded cheese (mozzarella & cheddar)
1/2 cup salsa + 1/4 cup salsa
1/4 cup diced green onions
1/4 cup chopped cilantro
1 tsp ground cumin
1/2 tsp kosher salt
1/2 tsp freshly cracked black pepper
10-12 (6-inch) flour tortillas

Preheat the oven to 350 degrees and lightly spray a 9x13 inch baking dish with cooking spray.

In a large bowl, combine the turkey, 1 cup of the cranberry sauce, sour cream, 3/4 cup shredded cheese, 1/2 cup salsa, green onions, cilantro, cumin, salt, and pepper.

Spoon about 1/3 cup filling into each tortilla, and roll tightly. Place seam-side down in the baking dish.

In a medium bowl, combine the remaining cranberry sauce and 1/4 cup salsa. Stir to combine and pour over the enchiladas, sprinkle with remaining 3/4 cups of shredded cheese. Cover the dish with foil and bake 45 minutes. Remove foil for the last 10 minutes of cooking. Continue to bake until cheese is crisp and bubbly. Sprinkle with additional cilantro and scallions, and serve.

3-4 Small Tangerines, Peeled
1 Small Fuji Apple, Cored
1-1/2 Cup Green Grapes
3-4 Stalks of Celery

Place all ingredients through your juicer (Magic Bullet), stir juice together and if you’d like it colder, serve over ice or mix up some ice in your blender.

I received my Foodie Pen Pal from Crystal at Counting by 4,my box was filled with lots of pre-made packages to make and a few snacks.

My kids made up both packages of pancakes one morning (when I was at work, bummer). Then for dinner we enjoyed the pizza crust. I made up the homemade pizza and used some left-over spaghetti sauce, what a great easy way to get some hamburger meat mixed into my son's plain Cheese Pizza. It worked like a charm, I will be using that trick more often. Next up I will be making the Corn Muffins and freezing them for our 16-day road trip to Missouri next month. All this delicious food in one tiny box.
